The Charthouse, Dingle
From it’s opening in 1997 until it closed in 2024, Annascaul Black Pudding consistently featured as a starter on the menu at The Charthouse. Annascaul Black Pudding has been served topped with chutney, wrapped in filo pastry and served with a jus. Lemongrass or rosemary jus work very well with this dish as has a delicious hollandaise sauce. It has been served as a Crisp Annascaul black pudding hash, topped with soft poached free range egg and wholegrain mustard cream.
Here it is served as: Annascaul Black Pudding, pear and lime chutney, wrapped in filo, oven baked, Kaffir Lime Leaf Jus. It is also served as part of a delicious sharing plate of Annascaul Black Pudding, pear and lime chutney, wrapped in filo pastry, Crozier blue cheese with caramelised walnut, seafood croquette, seared Atlantic scallop.
